Day One

Hello there,
My name is Jessica. I have been gluten free for about 5 months now. I have had digestive issues for about the last 5 years or so and when I finally talked to my doctor about it, he diagnosed me with IBS. Which for those of you who don't know what the is it's Irritable Bowel Syndrome. The Mayo Clinic defines it as: "Irritable bowel syndrome (IBS) is a common disorder that affects the large intestine (colon). Irritable bowel syndrome commonly causes cramping, abdominal pain, bloating, gas, diarrhea and constipation. IBS is a chronic condition that you will need to manage long term.
Even though signs and symptoms are uncomfortable, IBS — unlike ulcerative colitis and Crohn's disease, which are forms of inflammatory bowel disease — doesn't cause changes in bowel tissue or increase your risk of colorectal cancer."

I have all of the symptoms. I am learning my triggers as well. Most commonly triggers are: foods, stress, horomones and other illnesses. My triggers are anxiety, stress, gluten, alcohol, and dairy.  I do  my best to avoid stress and anxiety. I have completely cut gluten from my diet and have never felt better. I am not longer bloated and gassy or feel like a bolder is going through my intestines making me cripple down in pain. As for alcohol and dairy, well i avoid alcohol for the most part but I do enjoy a few drinks with friends now and again, which usually I feel okay afterwards. As for dairy, well I am an ice cream fiend, I LOVE it!! I try to avoid dairy, but with avoiding gluten it is hard to do. Although ever since I have cut back on the gluten, my body has been tolerating dairy much more.

Oh and to add on to it all I am allergic to shellfish. Meaning absolutely nothing at all.

I have decided that after reading a few blogs (I love finding recipes on blogs), that I should start my own. A)for the future fact of finding my own recipes as I have a bad habit of making something delicious and then forgetting about it and never thinking about it again, when really its something I would love to make more often.
B)I am also going to be trying some challenges and want to document some of the things I will be doing, how I feel doing them, and also as a track for my health (weight loss and muscle gain).

I am going to "blog" every day and record what types of meals I make, and with each one record my exercises that day.
